The ensaladilla rusa is one of the star dishes at Taberna Uvedoble. With it, Willie Orellana won the Malaga championship. The key is the room temperature and a homemade mayonnaise to which he adds a reduction of the concentrate from the prawn heads he uses as ingredients, as well as tuna, egg and new potato. A drizzle of oil rounds off this salad, which is characterised by its creamy, smooth texture.
